This scientific article shows the results of the research project “Characterization of food intake and swallowing of older adults in the Santa Luisa San José and San Camilo pavilions of the San Miguel Geriatric Center in the city of Cali- Valle Colombia, during the 2018-2019 period ”. Objective. The purpose was to identify the characteristics of food intake in older adults in the Geriatric Hospital. The problem was based on the multiple causes of alteration in the processes of food intake and swallowing that older adults have in their evolutionary process, which leads to the aging of the human being, influenced by numerous conditioning factors, intrinsic such as genetic, state of health and other extrinsic as habits in general. Method. The type of study and design is descriptive, quantitative, cross-sectional. For the data collection, an anamnesis and an evaluation of the food and swallowing intake of González and Toledo (2000), the FOIS scale of O'Neil ET AL, (1999) and the orofacial motor assessment (PEMO) protocol of Susanibar (2015).
