Item Estandarización del proceso de producción de tortas en la microempresa Sweet Cakes(Universidad Santiago de Cali, 2022) Álvarez Villalobos, Zaira Paola; Caicedo Quiñones, Héctor David; Garcés Castro, Laura Cristina; García Jiménez, Juan Camilo (Director)Sweet Cakes is a Cali microenterprise dedicated to selling personalized cakes. The main problem that has affected the stability and productivity of the pastry shop is the absence of documentation and standardization of its processes, that is, they do not have a standard model for the production of their cakes that allows production efficiency; in turn, the lack of standardization is reflected in the absence of management indicators that facilitate and contribute to decision-making and continuous improvement; Therefore, a standardization model is proposed in the production process of 1L cakes because it represents the highest percentage of sales compared to other size cakes. To carry out this descriptive research, an adaptation of the PHVA cycle is made, including within the scope of the project the first two stages of the cycle (Plan and Do), starting initially with the diagnosis of the general characteristics of the microenterprise and the description specific to the cake production process, later the standard is defined through the study of methods and times and management indicators are reflected for the constant monitoring of the production process; One of the main findings obtained is the detailed knowledge of the flow of the key activities of the production process with their respective standard times, this information allowed knowing the reduced time with the implementation of the standard in the preparation of cakes, positively impacting the productivity of Sweet Cakes.
