Although they implement storage strategies, such as fast rotation of perishable products and price reductions, there is a high waste of fruits and vegetables due to factors like maturation, transport, or storage, which generates both environmental impact and high operating costs. Therefore, these organizations are looking to implement strategies based on the qualitative and quantitative analysis of their information sources (books, theses, articles) to reduce waste, improve product durability, lower costs from frequent purchases, and achieve a competitive advantage through the proper use of their organic waste.
