Item Tendencias de la espectroscopia infrarroja cercana (NIRS) en la calidad y autenticación de la leche(Universidad Santiago de Cali, 2024) Sarria Cante, Mateo; Castro Narváez, Sandra Patricia (Directora)Milk is a food of high consumption and of significant importance in health; its analysis is usually performed by methods that require reagents, are often wasteful and time-consuming. Given the need for rapid, reliable and low-cost analysis in the milk production chain, infrared spectrometry (NIRS) has become important both in terms of its scope and portability. This article reviews the trends in the use of NIRS in the authentication and quality of raw milk, UTH milk from goat, camel and cow. A review of research articles between 2017 to 2024 of this was conducted using databases such as Science Direct, Springer, Scopus and Google Scholar; review articles Artículo de revisión 4 were excluded, those studies with the keywords that ensured the relevance and quality of the selected sources and those that presented robust results accompanied by statistical studies were selected. We also examined publications with scopes that go beyond the physicochemical characteristics of milk, its quality control and authentication such as the identification of animal metabolites and hormones. As a result, it can be concluded that NIRS is highly predictive of milk composition and the portability of the instruments can implement real-time analysis. However, it is emphasized that the technique requires continuous validations, to be compared by multivariate statistics to establish clustering of the vibrational modes and algorithms for prediction after validation.
