Item Determinación voltamétrica de piperina en pipilongo (Piper tuberculatum)(Universidad Santiago de Cali, 2022) Serna Suarez, Willian Andrés; Castro Narváez, Sandra Patricia (Directora); Jaramillo Aguirre, Alonso Elías (Director)Voltammetric techniques were applied in the qualification and quantification of piperine, an alkaloid with antioxidant and pharmacological properties beneficial to humans, in different peppers and in pipilongo (Piper tuberculatum), a long pepper with promising agroindustrial commercialization in the department of Cauca, Colombia. Piperine exhibited an irreversible oxidation system on glassy carbon (GC) electrode at pH 7.42. Scanning rate effects related an electrochemical, electrochemical, chemical (EEC) mechanism where the first oxidative process is dominated by diffusion and the second by adsorption. Modification of the GC electrode with PEDOT improved the faradic current; however, the current due to the polymer masks the piperine signal at low concentrations decreasing the linear ranges with respect to the bare electrode. The precision of the method was established with repeatability, reaching coefficients of variation lower than 5% and reproducibility showed that there are no significant differences between the variances in three consecutive days. Using calibration curves, detection limits of 7.492 µM and 0.033 mM were obtained with GC and GC/PEDOT and quantification limits of 0.025 mM and 0.111 mM, respectively. The method was successfully applied to the determination of piperine in pipilongo and commercial pepper samples with recovery percentages above 97% that were comparable with high performance chromatography (HPLC). The VPD electrochemical technique provided qualitative and quantitative information in a reliable, simple, precise and accurate manner, with low environmental and economic impact compared to other methods for determining piperine in food matrices.
