The research focuses on identifying, assessing, and mitigating risks associated with this task. It starts with a meticulous identification of key operational risks that employees involved in this task are exposed to. It involves creating a hazard identification matrix, followed by risk assessment and proposing measures to prevent their occurrence. This study is carried out using an applied scientific approach, employing exploratory and formulative studies. The Bowtie method is adopted, known for its ability to conduct a detailed and structured analysis of risks in Sonetto candy production. This method is divided into three key stages: risk identification, risk assessment, and control and monitoring. Throughout this process, specific tools like structured surveys, risk diagrams, risk maps, and Gann diagrams are used to comprehensively assess risks in production. Findings reveal primary risks, including human errors, operational failures, supply chain issues, and quality control deficiencies. These results underscore the urgency of implementing effective labor strategies, promoting efficiency, and fostering strong teamwork. In summary, this research provides valuable insights and recommendations that will guide Comestibles Aldor S.A.S. in their efforts to improve safety and efficiency in Sonetto milk candy production
